Cook without book

The interview of Mrs. Smita M. Nabar, owner of Abhiruchi Baking and Cooking Classes taken by Vaibhav Kalsulkar. She is busy with her cooking and backing classes for more than 10 years.

How you came into cooking line?

I started cooking as a hobbies. Initially, I was not aware that my preparations were really good, but my neighbors and friends asked me to take classes so that others could learn from me. Then I started my cooking classes.
I did a course in bakery from the Datar Catering Collage, and then a course in food preservation at Cotton Green.

What type of courses you offer?

We have range of courses on baking, sherbet and ice creams, snacks, Gujarati thali, Malwani Thali, etc.
In the backing course, we teach more than 25 items like different types of cakes, bread, biscuits and icing. It is three days course and the fee is Rs.180. Then there is course on Sherbet and ice creams, snacks, sandwiches, soups, party snacks, chocolates and the like.
We have another course on nuances of Gujarati Thali. We teach the students to prepare undhio, dal dhokli, khamani, muthia, kadhi and few other dishes. It is a very popular course. Another course we have on Malwani items like wada, fish curry, shell masala, Chicken, etc. We also teache Rajasthani foods like gate ka saag, dal baati, moong dal, etc. In Maharashtrian Thali course, we teach puran polies, bharly vangi and many more.

I use katories and spoons for easy measurement that are commonly used at home.

Tell us about your shows on TV/ Channels.

I have done shows in Stree Vividha on Doordarshan; I also teach recipes on show named 'Mejwani' this is regularly broadcast on Thane Varta. I had done some demonstrations as a part of social work.

Give us some idea about them.
I had given some demstration to show organised by Thane-Rotary two years ago. Mrs. Purnima Kabre, former Nagaradhyaksha of Ambernath had organised an event where I had given demonstrations to more than 300 people. Also I attended event Diwali Vacation 2000 which was organized by Mr. Gokhale in Bedekar Collage. I was judge in food compition held there.

Have you written any book on cooking?

I have also written a book in Marathi named 'Abhiruhi'. It is priced at Rs.60 if purchased in class.

Tell us something about your students?
I have students coming from Shahpur, Kalyan, Dombivli, Thane, and Crawford Market. My most satisfaction comes when my students set up their own catering service and supply orders. One of my Students has started a bakery at Nasik.
